Observed observed a small leak of water from the fans inside the walk in refrigerator door at time of inspection. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. All food items underneath fan were moved as to not get any liquid on them. All temperatures inside walk in cooler were up to standard. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed chicken soup (53°F) and meatballs (101-113°F), with temperatures below 135°F in the hot holding unit. It was determined that the staff had not fully reheated the products before placing them in the hot holding unit. The reheat step had occurred less than an hour before the above temperature measurement. Alerted manager who had staff reheat the chicken soup and meatballs to 165°F before returning them to the hot holding unit. Discussed reheating and hot holding procedures with staff. The manager plans to retrain all staff on these expectations. Corrective Action: Corrected at time of inspection.

Observed marinara meatballs (105-110) and Cheese and Broccoli Soup (128-131°F) hot holding below 135°F. Manager stated the items had been in the hot holding unit for less than an hour. The manager adjusted the hot holding unit to a hotter setting after observation. Instructed staff to reheat the hot holding items to 165°F and return them to the hot holding unit.
