Observed chopped house salads with sliced tomatoes (47°F) and parmesan cheese (48°F) in the server's prep table cold holding above 41°F. All foods had been placed in the unit approximately an hour prior and were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. The establishment is already affectively using an ice bath on the top of the unit. The unit's internal compartment measured 43.3°F on the min/max thermometer at time of inspection. Thermometers calibrated onsite. The manager placed a work order in on the prep table. Adequate refrigeration is available to keep cold holding foods safe. Corrective Action: Corrected at time of inspection.

Observed the main dishwasher with chlorine sanitizer measuring at 25 PPM. Alerted the Person In Charge (PIC), who called their third-party servicer at time of inspection. Staff were alerted and will use the 3-compartment sink to sanitize dishes until the unit can be serviced. Reviewed sanitizer concentration requirements. Corrective Action: Corrected at time of inspection.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed exposed raw, porous, concrete in the bar where the laminate flooring has pealed off. Proper repair is required. Do not use unapproved methods. Establishment is to cover the raw concrete with an approved surface or sealant to make the area non-absorbent, smooth, and easily cleanable. Also observed large orange spots on the metal walls in the walk in. Establishment to clean the rust with warm soapy water and seal the compartment with a food safe semi-gloss paint or another approved sealant. Food to moved from the areas were active cleaning is occurring when repairing the unit. Establishment to repair the walk in before the next routine inspection. Also observed a damaged door seal on the hot holding warmer. Establishment to replace the seal before the next routine inspection. Discussed premises requirements with the manager.
