Observed prep cooler by the cook line with minmum ambient temperature of 55F. The person in charge adjusted the cooler settings but the cooler was only able to achieve a minimum temperature of 48F. The prep cooler was used to store TCS foods under time as control. The person in charge place the TCS foods in ice bath to reduce the maximum temperature of the food items during the period placed under time as a control.
