Inspector's notes
Observed sanitizer backets to have a quat concentration of 0-100ppm. Sani buckets are filled up at the three comp sink dispenser. Dispenser provided sanitizer measuring 150ppm. Per manufacturer concentration shall be 200ppm for food contact surfaces. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Staff will self dilute sanitizer until automatic dispenser provides approved concentration. Corrective Action: Corrected at time of inspection.

Observed establishment to use quaternary ammonia as sanitizer and have test strips that expired in 2023. Test strips that provide an accurate reading are required for any sanitizers used with food contact surfaces. PIC provided new sanitizer test strips. Inspector's notes
In the sanding cooler, observed cream cheese, cooked mushrooms, shredded cheese, cut tomatoes, and cut lettuce having internal temperatures of 45-47*F. Person in charge states they had checked the unit less than 3 hours prior to inspection and was below 41*F. Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
