Observed pan of fruit cups tightly sealed with an ambient temperature of 45*F. Person in charge stated foods were prepared within 4 hours of inspection and removed lids and placed in freezer for quick cooling. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Cheesecake and fruit parfaits in display cold holding in dining area with an internal temperature of 53*F. Person in charge mentioned foods were placed in the unit over 4hrs prior to inspection. All cold temperature-controlled foods should be held at 41*F or below. Person in charge voluntarily discarded. Recommend checking temperature logs before utilizing refrigeration units.
