Observed ham and bean soup and cooling in 3 deep buckets in the walk-in between 86-115*f degrees. Owner stated buckets were in an ice bath in the sink and were removed by staff before fully cooling down and placed in walk-in 20 minutes prior. Buckets were removed and iced to finish cooling, in the proper time frame. Corrected
