Observed cooked onions and meat sauce cooling in deep containers. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed two unlabeled spray bottles containing a clear liquid in facility chemical storage. Per Person-in-charge (PIC), clear liquid is bleach and a water-bleach mixture. PIC added a label to spray bottles indicating what the substance is. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Observed TCS food items with internal temperature between 47F - 53F in the Pepsi cooler in the back kitchen area. TCS foods included milk, coleslaw, ranch buttermilk and thousand island salad dressings, cheese spreads/slices, and eggs. The person in charge stated the food items had been store in the cooler for more than 4 hours, and the food items were embargoed at the time of inspection. Observed a Pepsi cooler used to store TCS foods in the back kitchen area with a minimum internal ambient temperature of 47.3F as measured by inspector min/max thermometer. The establishments own internal thermometer displayed a temperature of 55F - 60F. TCS foods inside the cooler had internal temperatures between 47F -53F. The person in charge removed all TCS foods from the cooler and summitted a work order for repairs at the time of inspection. Discussed not using the cooler for storing TCS foods until the unit has been serviced and is maintaining TCS cold holding temperature of 41F or less. Correct By: Corrected At Time Of Inspection
Core-3-304.14, C: Wiping Cloths, Use Limitation Observed wiping cloths in a chlorine sanitizer solution with less than 25ppm chlorine. The person in charge discarded the solution and made a new sanitizer solution with 50-100ppm chlorine.
