Observed cooked beef, cooked pork and cooked chicken cooling in walk-in refrigerator with plastic membranes fully covered, manager stated the above food items were cooked and put into walk-in refrigerator for cooling about 30 min prior to inspection, internal temperature measured between 127*F to 132*F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Manager removed the plastic membrane at time of inspection. Corrective Action: Corrected at time of inspection.
