Observed assorted tofu and bean sprouts in walk-in refrigerator with internal temperatures between 46-49 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), items were received in a delivery 1 hour prior to inspection. Items were located in a walk-in refrigerator that was not holding cold during the inspection. Continued from Violation #14:Continued from 4-501.114…Inspector observed large air bubbles in sanitizer line causing machine to not feed chemical accurately. Machine was primed until no air bubbles were observed in line and concentration of machine was observed at 100ppm. Discussed importance of checking concentration of machine with chlorine test strips before every shift and ensuring air bubbles are not present in sanitizer line. Chlorine concentration of low temp dishwasher must be between 50-100ppm for proper sanitization.Continued from 4-702.11… Inspector discussed with PIC that pot and pan detergent is soap and is the first step in cleaning equipment. Equipment must be cleaned with soap and water, rinsed, and then wiped with proper concentration of sanitizer. Inspector verified quat sanitizer at three comp sink was at 300ppm. Quat sanitizer used to sanitize equipment in place must be between 150-400ppm for proper sanitization. Had employee sanitize dicer with quat sanitizer at time of inspection.A pattern of non-compliance is developing for Priority violation #[6], [2-301.14], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge.
