Observed spoons for boba and utensils by coffee machine sitting in room temperature water. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. Observed an employee walk outside and upon re-entrance into facility begin to help customer and touch food-contact surfaces such as tongs for donuts and bag for customer donuts without a handwash. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed swiss-american cheese in prep cooler with internal temperatures between 49° and 53°F placed in cooler night prior to inspection. Observed cream cheese packets with internal temperatures from 47°F to 52°F placed in cooler two days prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed covered shallow (<4" deep) container of cooked egg patties cooling at 49 degrees Fahrenheit in lower compartment of large prep-style refrigerator. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per person in charge (PIC), eggs were placed in container to cool at 8am, within the parameters for proper cooling times and temperatures. PIC removed lid from container to cool rapidly - inspector verified temperature. Corrective Action: Corrected at time of inspection.

Per Person in Charge (PIC) the TCS items were in the reach in for more than 4 hours. Embargoed the milk tea and the tuna salad. PIC voluntarily discarded the milk tea and the tuna salad. Also observed in the short refrigerator net to the the cash register with TCS items of single servings of milk in plastic containers at a temperature of 50*F and the unit with an ambient temperature of 50*F. Discussed with PIC to not use the unit until it is working and reaches an ambient temperature of 41*F before putting TCS items in the unit. Per PIC the single serving milk containers were in that unit for more than 4 hours. Embargoed the milk containers and PIC voluntarily discarded them. Correct By: Corrected At Time Of Inspection
