In walk in cooler, assorted packaged dairy products and packaged roller dogs with internal temperatures of 47*F-49*F. Per manager, dairy and roller dogs were in walk in cooler >24 hours and temperatures were checked >4 hours. Assorted dairy products and roller dogs were discarded. See embargo form. Ambient temperature of first cold compressor nearest door with a temperature of 48*F, taken with inspector probe thermometer. Instructed manager to call in repair order. Recommended storing of TCS foods away from main door in to walk in cooler. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
