Inspector's notes
Observed baked chicken breasts in warmer with an internal temperature between150 - 158*F. As per the staff on site chicken was cooked and temped to be greater than 165*F. When staff checked chicken with metal stem thermometer a different read out was observed on digital thermometer and in house hand held equipment. Chicken was placed back into oven and continued to be cooked to 165*F. Advised staff to temp multiple pieces of chicken to verify cook temperatures. Manager on site calibrated equipment. Corrective Action: Corrected at time of inspection.

Observed sliced signature selection deli meats in to go cooler at 43-45*F. Cold hold of food to be 41*F or cooler. As per the person n charge the packaging was labeled and placed into refrigeration unit this morning. Advised staff to cool foods to 41*F prior to placing in cold hold unit for self service. Meats were returned to walk in cooler to cool to 41*F or lower. Corrective Action: Corrected at time of inspection.
