Observed dish sinks filled for washing and sanitizing, rinse basin had old food debris from rinsing previously used equipment. When washing equipment each basin must be washed rinsed and sanitized prior to washing dishes. Advised staff to not set up sinks for washing dishes until all equipment has been rinsed and basins washed, rinsed and sanitized.
