Inspector's notes

Observed a cutting board in the sanitizer solution in the 3-compartment sink. The sanitizer level was at or above 500 ppm when test with inspector's test strips and their test strips. Person in charge (PIC) also tested the sanitizer and observed similar results. Also observed a clip board with sanitizer levels for each time it was tested. Some of the entries look to show 500ppm. Quat sanitizer should be between 150-400PPM. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC called to have the dispenser serviced and added water to solution to get the sanitizer to 200ppm. Corrective Action: Corrected at time of inspection.
