Worker was immediately instructed to discontinue bare hand contact with ready-to-eat food, and the loaves that were improperly handled were voluntarily discarded. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff which resulted in the violation. Correct By: Corrected At Time Of Inspection

Color changing dots should change color when final rinse reaches 160F at utensil surface as required. Also, the external rinse temperature gauge did not exceed 172F ( should be at least 180F), and both the wash and rinse pressure gauges were inoperable. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. Staff to use the available three compartment sink to wash/sanitize wares, and the manager immediately scheduled repair of the unit. Correct By: Corrected At Time Of Inspection
