Inspector's notes
Observed cut melons(cantaloupe and honeydew)/50F in fruit trays stored in a refrigerated case near the store entrance. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The melons were stored on styrofoam trays that were standing upright on upper shelf in the unit. The trays appeared to be blocking any cold air flow onto the melons and fruit on the trays. Per manager, the trays had been placed in the case the day before. The cut melons improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
