Observed pepperoni pizza in warmer with an internal temperature of 121*F. According to logs, original cooking temperature was 160*f within 2 hours prior to inspection. PIC, was instructed to re-heat to 165*f for 15 seconds. Discussed using time as a control for food safety, if unable to keep temperature above 135*F at all times after cooking.
