Observed pepperoni pizza slices in warmer with an internal temperature of 108*f. According to employee, warmer had been turned on 20 minutes prior to adding food. Please allow enough time to warm up and ensure proper temperature is set to keep all TCS foods above135*F at all times. Instructed employee to re-heat to 165*f for 15 seconds.
