Observed hamburger in warmer by serving line holding 109-125 F, per PIC they were made an hour prior and are not on time as control. PRIORITY VIOLATION-7-202.12, P: Conditions of Use Observed concentration of quat sanitizer in sanitizer bucket above 400 ppm. Discussed with PIC that pump of dispenser needs to be adjusted to dispense proper concentration or that solution will need to be diluted after every use. Quat sanitizer for use in food contact surfaces must be maintained between 150-400 ppm. Concentrations over 400 ppm could be toxic if consumed. Sanitizer was diluted to 200 ppm.
