Observed 0 ppm Quat sanitizer in the 3-compartment sink actively being used at time of inspection, in the produce dept. Quat sanitizer should be between 200-400 ppm to ensure the dishes are properly sanitized. The sanitizer bag was changed, and the water was switched to cold, then the sanitizer tested correctly. Corrective Action: Corrected at time of inspection.

Reach-in unit was measured at 49'F. Sample of whipped cream bottles in question was measured at 48-49'F and have been out for more than 4 hours, per PIC. Coldholding TCS food items and food items instructed to be kept refrigerated by manufacturer must be kept at 41'F or below and not out of temperature for more than 4 hours. Bottles in question were embargoed and PIC discarded the items at time of inspection. Correct By: Corrected At Time Of Inspection
