Inspector's notes
Observed self-serve soda fountain drain with porous insulated tube extending beyond the drainpipe, above the floor drain. Insulated tube has accumulation of organic slime and debris inside. Please cut insulation tube so that it does not extend beyond the drainpipe to avoid accumulation of matter inside the porous material. Spoke with the person-in-charge (PIC) about the accumulation and the need to adjust insulation length. Corrective Action: Correct prior to next routine inspection.

Observed two covered containers of cooked barbacoa meat with an internal temperature of 43-45F inside the walk in cooler. The person in charge stated the containers may have been placed out side during the morning prep less than 4 hours ago then brought back into the cooler from ambient temp. The person in charge discarded the barbacoa at the time of inspection. Discussed with the person in charge when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. :
