Observed unattended raw meat on the prep table and diced meat in a bucket next to the prep table with internal temperature of 69F. The person in charge stated the meat had been out less than 2 hours and was being prepared between downtime of other tasks.

Most TCS food items had been prepared between 2-6 days prior and were date marked accordingly. TCS food items with undetermined date of preparation were embargoed at the time of inspection. TCS foods with no date mark included cooked beans, cooked chile relleno, cooked fish, cooked shrimp, cooked beef, cooked pork, cooked chicken, cooked red/green salsas, cooked stews and broth, cooked meat rolled tacos, cut leafy greens, tomatoed pico de gallo, and deli ham.
