#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed the following time/temperature controlled for safety food items in 3-door standing refrigerator near cookline with internal temperatures between 44*F-51*F: marinated raw chicken, raw chicken parmesan, cooked pasta, heavy cream, and liquid eggs. PIC stated items are used for both the restaurant and a catering order for the next day. Unit had a minimum internal temperature of 44.6*F, via min/max thermometer. Person in charge (PIC) stated items were prepped this morning from refrigerated products and an ice bath was used to cool cooked pasta. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Establishment observed to have adequate refrigeration onsite at time of inspection. PIC stated unit will not be used to hold TCS food products until it is repaired. Corrective Action: Corrected at time of inspection.

Observed 2 doors on the right leading to walk-in fridge in pizza making area gaskets on lower right sides on doors to have a gap, not allowing door to fully close tightly. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
