Inspector's notes

Observed TCS food items with interal temperature between 46F - 59F in the reach-in dairy cooler. TCS food items included milk, dairy based creamer, cheese, deli sandwiches, deli snacks, hot dogs, and cheese filled taquitos. The person in charge stated the food items had been in the reach in cooler for more than 4 hours and the food items were embargoed at the time of inspection.

The person in charge removed all TCS foods from the reach in cooler at the time of inspection. Discussed not using the reach in cooler for cold holding of TCS foods until it has been repaired and maintains 41F or less.
