For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. -- Observed ham and turkey sub sandwich and a container of beef sticks with cheese cubes in open-air reach-in refrigerator past the use by date of 09/24. Also observed prepackaged beef sandwich without a date mark. The person in charge (PIC) unsure when the beef sandwich was thawed and placed in open-air refrigerator. At the time of inspection, the PIC voluntarily discarded the sandwich, container of beef and cheese, and beef sandwich. Reviewed ready-to-eat discard requirements with the PIC.
