Observed a large container of raw chicken wings in the walk-in cooler, near other food and drink items. The container was up against ready-to-serve bottles of beer. Discussed with person in charge (PIC) that the risk of cross contamination is higher in this location. PIC moved the raw chicken to the bottom shelf of the rack at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. PIC wrote on the container "soap" at time of inspection and will replace the container with a container of hand soap by next routine inspection. The condiment container will be discarded after it is replaced and never used to store food. Corrective Action: Corrected at time of inspection.
