Reviewed the requirements for temperature/time control with the manager. Employee provided the discard times for the TCS items in the case.Please continue time as control until the hot case is repaired to previde proper temperature control.

Manager had recently washed equipment pulled back to dishwashing to be manually sanitized in the 3 comp sink. Please continue to do so until unit is repaired to reach required temperature.
