Inspector's notes
Observed the yogurt in the cold-holding unit near front counter with an internal temperature of 43*F using probe thermometer. Cold-holding unit was holding at 44*F using min/max thermometer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Discussed with person in charge (PIC) that yogurt needs to hold at 41*F or lower. PIC stated yogurt was placed in the unit the night before. PIC discarded yogurt at time of inspection (see embargo form). PIC shall use alternate unit to hold yogurt. PIC turned the temperature down on the cold-holding unit and will verify it is 41*F or lower before using for TCS foods. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
