Internal and external thermometer for unit was observed at 40*F. Inspected with badge number RS 871. Upon re-inspection, all violations due for correction have been corrected.

Observed containers of pre-cooked sausage, pre-cooked ham, and pre-cooked bacon at 45*F - 47*F in walk. Ambient temperature of walk in was at 48*F per inspectors min/max. Per PIC, the walk in does not self close and workers must manually close it. A device attached to the wall (opposite to entrance) goes off when walk in is out of temperature. Device had been beeping throughout inspection. PIC had used dry ice (away from food) to ensure walk in gets colder and TCS foods dropped in temperature. Advised PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
