Inspector's notes

Observed the ready to eat (RTE) foods/meat in the hot holding case with an internal temperature between 87*F - 120*F with probe thermometer. Person in charge (PIC) removed the food and properly re-heated at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the containers of store-made salsa and ceviche without dates. The foods were prepared the prior day. PIC put dates on the containers at time of inspection.
