On sales floor in cold case, cut watermelon with internal temperatures of 49*F-51*F. Per time sticker, watermelon was cut >6 hours. Cut watermelon was discarded. See embargo form. Discussed proper cooling temperatures and methods with managers. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. Corrective Action: Corrected at time of inspection.
