Observed 0 PPM of chlorine sanitizer dispensing from mechanical ware washing machine. PIC ordered more sanitizer for warewashing machine. Kitchen was not in use at time of inspection and instructed employees to use three compartment sink until sanitizer is replaced. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Observed ice build up on ceiling of walk-in cooler. Cooler was holding ambient air temperature of 40*F at time of inspection. Also observed ice build up in freezer, ambient air temperature was 11*F at time of inspection and TCS foods were frozen at time. Ice cream bars had partially melted and refrozen. All items were discarded at time of inspection. Please make repairs to freezer to prevent further increase in temperature of walk-in freezer.
