Observed cooked onions 7/18, brats 6/28, and cooked hamburgers 6/28 stored in upright reach-in cooler. According to PIC, items were cooked on 6/28 and frozen same day. Discussed importance of documenting thaw date to ensure food is stored for a maximum of 7 days, including prep date. Foods were dated at time of inspection. Corrective Action: Corrected at time of inspection.
