Observed raw pork product in cooling drawer (upper left) beneath grill at 48*F. Cold hold of food to be 41*F or lower. As per the person in charge pork was placed in the cooler approximately 2 hours prior to the inspection starting. Pork was placed in walk in cooler to rapidly cool back to 41*F. Advised staff to periodically verify cold hold temperatures using a metal stem thermometer. Corrective Action: Corrected at time of inspection.

When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Person in charge relocated dishwashing to three-bay sink for chemical sanitization at time of inspection. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed raw fillets of tilapia at 57-63*F in Electrolux thawing cabinet. Unit was observed at 65*F. PIC stated fish had been in unit for about 1 hour. Instructed PIC that fish could be placed in walk-in to rapid cool to below 41*F but PIC decided to discard product. PIC explained thawing cabinet process and that cabinet goes above 41*F in order to thaw foods. Based on prior County decision and correspondence, thawing cabinet cannot be used for intended purpose without variance approval. Establishment may use cabinet as a fridge unit and should not be set above 41*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
