Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC) and alternative options such as double gloves to make sure raw egg does not contact RTE foods. Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cubed ham at 45*F, hash browns at 44*F, and sliced tomatoes at 45*F in the cold-holding prep table. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The out-of-temperature food had been placed into the prep table trays less than an hour prior to inspection. The PIC placed ice underneath the prep table trays to cool and maintain the food at an acceptable temperature. The PIC also called for repairs. Corrective Action: Corrected at time of inspection.
