Observed kitchen low reach-in drawers holding raw squid, raw clams, raw chicken, raw mussels, raw scallops, raw, shrimp, and cooked sausage, chicken wings, and eggplant parm 48-50*f degrees. Per manager on duty all items had been out of temperature less than 4 hours and moved to walk-in to cool. Corrective Action: Corrected at time of inspection.

Observed pastrami, raw chicken, and ricotta cheese wrapped in salami in prep line cooler at 44-47° F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge (PIC) stated that pastrami and salami-wrapped cheese had been placed in cooler the night prior, while the raw chicken had been placed in the cooler two hours prior. PIC moved raw chicken to walk-in cooler to rapidly cool and discarded other improperly cold-held foods. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.
