Observed unapproved trapping method (sticky trap) on the floor underneath prep sink with live baby roaches. Informed PIC that these are not allowed and would need an enclosed trapping method, and to obtain proper pest control documentation. PIC removed sticky trap but was not able to provide documentation, however, mentioned Green Leaf sprayed on a monthly basis. Advised PIC of the proper trapping methods and recommended to increase pest control treatment. Corrective Action: Corrected at time of inspection.

Materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated ware washing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Observed the front hand sink with an empty soap dispenser. Informed PIC that the hand sink needs hand soap available at all times. PIC provided hand soap at time of inspection. Observed the hand soap dispenser in the back of the establishment with no batteries. Informed PIC that the dispenser should be fixed so that hand soap is readily accessible. PIC placed hand soap at the sink at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Inspector's notes

Observed two containers of hot dogs in the top of the cold holding unit with internal temperatures of 48*F-51*F. Informed PIC that the hot dogs need to be cold held at 41*F or below. PIC informed that the hot dogs had been placed in the unit about an hour and a half prior. PIC moved the hot dogs to the bottom of the unit to cool back down to 41*F at time of inspection. Observed that the hot dogs were stacked in a double Cambro container. Informed PIC that the containers should not be doubled due to the cold air not being able to penetrate through and properly cold hold the product in the second container. PIC stated that they will use only one container. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed 12 corndogs filled with cheese and hot dog sitting on the prep counter next to the grill with an internal temperature of 104*F. PIC stated that the corndogs were prepped almost three hours prior and are kept to re-fry the whole day. Informed PIC that corndogs are a TCS food and need to be either hot held over 135*F or cold held 41*F and below. Informed PIC that the corndogs need to be discarded. PIC discarded the corndogs at time of inspection. Corndogs were embargoed. Suggested to PIC that they cool down the corndogs and keep them in the reach in for service. PIC stated that they will cool the corn dogs and store them in the reach in. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
