PIC removed the hose from the mop sink at time of inspection. Obtain a hose without a shut-off valve prior to next routine inspection. 2. Observed a counter-top fryer added in the back of the establishment with no hood above it. Informed PIC that the fryer needs to be placed under a type 2 ventilation hood. Move the fryer under a type 2 ventilation hood or use a ventless fryer. 3. Establishment has reverted back to the old menu which includes crepes, fried per order frozen foods, and boba teas/smoothies. Changing the permit from a class 4 to a class 3.
