Observed cooked fettucini pasta (89'F) in the cooling process being stored in the two-door standing refrigerator across from the dishwasher while lidded and saran wrapped at time of inspection. Discussed proper cooling methods with PIC. All TCS foods cooling were uncovered to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Per PIC, all eggs offered for service are pasteurized, the Caesar salad dressing is commerically purchased, and it does not contain any raw/undercooked ingredients. Reviewed restrictions for Assisted Living (AL) facilities with PIC: Highly susceptible population such as an AL facility cannot be served any of the following - unpasteurized juices; pasteurized eggs and egg products are to be substituted for certain raw egg ingredients; no RTE raw animal foods or foods containing raw or partially cooked animal foods or raw seed sprouts. The PIC reprinted the menu with the consumer advisory removed at the time of inspection.

No strength coming from chlorine warewashing unit. Dishes being manually washed were being sanitized with quaternary solution at150ppm. Person in charge had employee remove dishes from unit and sanitize manually dishes.
