Observed an oven in the main kitchen with black and brown matter encrusted on the internal cavity. The manager stated the oven has not been in use since they got the grill (approx.. a month ago). Educated the Person in Charge (PIC) about cleaning frequency requirements. The cavities and door seals of ovens shall be cleaned at least every 24 hours when in use and are to be stored as clean when not in use. Correct By: Correct Prior To Next Routine Inspection
