Predefined Comment: No County legal action will result from this inspection.Main walk-in fridge measuring temperature of 42-51°F output from refrigeration fans at time of inspection. Ambient temperature at the floor of the fridge was measured to be below 41°F at time of inspection. TCS foods (milk/half and half) inside of fridge were measured to be still below 41° and were moved to one of the reach-in fridges at time of inspection. Maintenance was called for the walk-in. Advised PIC to wait until walk-in was serviced and proper temperatures achieved inside the unit before stocking TCS foods inside.

Observed half and half creamer date marked for 8/18 at the time of inspection date 8/29. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
