Observed the hot water at the front sink unable to turn off once the pedal is engaged. Observed the drainpipes from the soda fountain entering into the floor drain. Informed PIC that the pipes need to be adjusted so that there is a one-inch air gap between the outlet of the pipes and the top of the floor drain. Discussed with PIC that the front hand sink needs to be brought back into good repair. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed raw chicken with internal temperatures ranging 47*F-51*F in the stand-up fridge near the fryers. The ambient temperature of the unit was 53.6*F, measured using min/max thermometer. PIC stated that the chicken had been in the unit for about 5 hours. Informed PIC that due to the chicken being out of temperature for more than four hours it needs to be discarded. PIC discarded the chicken at time of inspection. The chicken was embargoed. PIC agreed to not use the unit for TCS food products until the unit can hold TCS foods at 41*F or below. PIC put in work order for the machine at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PAll TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
