Inspector's notes
Observed multiple boxes of ground beef, beef chorizo, and pork bratwurst stored above boxes of salmon and a box of lamb loins. Informed PIC that raw animal proteins need to be stored according to their final cooking temperature. PIC instructed employee to reorganize the raw animal proteins at time of inspection. All raw animal proteins were properly stored at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a box of raw pork loin fillets stored over two fully cooked, cured hams and a box of kimchi jars in the meat market walk in. Informed PIC that the pork loins must not be stored over any cooked or ready-to-eat (RTE) foods. Worker stated that these items were left in the wrong place. PIC instructed the worker to store the product properly according to cooking temperature. The RTE and raw products were stored properly at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
