Observed items in refrigerator in lobby with an ambient temperature of 53-60*F. (shredded cheese, milk, turkey) Person in charge could not determine time the foods were last held at 41*F and removed items for discard. Discussed utilizing temperature logs. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding.
