Observed 4 inch tub of cooked rice located in the walk in cooler registering an internal temperature of 85°F. Per the person in charge, the rice was placed in the walk in cooler 4 hours prior at 1pm. The establishment shall cool their cooked perishable food items from 135°F to 70°F within 2 hours and from 70°F to 41°F within an additional 4 hours.
