Must provide a min/max probe thermometer or other approved irreversible measuring device for establishment prior to re-inspection. Sanitizing using high temperature warewashing machines requires an irreversible measuring device to ensure food contact surfaces reach 160°F. Corrective Action: Correct prior to re-inspection on 2/6/2025.

Waste from equipment must drain indirectly to a floor sink. Provide rigid drain line (flexible tubing may be sleeved to rigid pipe) for dish machine and route to drain at floor sink. Ensure adequate slope is maintained in drain line to allow wastewater to properly drain and provide a minimum 1 inch air gap for drain line above flood rim of floor sink prior to next routine inspection. Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Observed half pint individual packaged containers of reduced fat milk, chocolate milk, fat free milk, and 4 oz. individual packaged containers of raspberry, vanilla, strawberry, and cherry nonfat yogurt in a small beverage cooler on the buffet line with internal temperatures of 45 to 49*F. Per employee, all items were stocked that morning less than 2 hours prior to start of inspection. Observed ambient temperature of beverage cooler at 45.9*F. Employee moved all items to reach-in fridge to rapid cool at time of inspection. Discussed with employee about not stocking the cooler fully and restocking it more often during breakfast hours. Also discussed with employee about moving milks to reach-in cooler in the back to rapid cool any left over items at the end of day. Discussed proper cold holding with the PIC.
