Observed meat department staff portion a customer order of raw salmon involving the use of a chain mail glove and knife. After handing order to customer, employee rinsed knife and glove of in 3-comp sink with water and set to dry. Discussed the need to wash rinse and sanitize food contact surfaces before putting away clean. 3-comp sink was filled and items were washed correctly.
