Observed cooked beef cooling at room temperature with internal temperature of 89*F to 90*F. Manager stated the cooked beef was prepared about 1 hour prior to inspection. Discussed proper cooling methods with manager. Manager moved the cooked beef to walk-in refrigerator for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.
