Inspector's notes

Observed salad mix in reach-in cooler with an internal temperature of 60*f. PIC stated salad mix was mixed and drained within 1 hour prior to inspection and moved salad mix back to walk-in cooler to rapidly chill. Also observed cardboard cutouts obstructing cooler airflow to prevent lettuce from freezing. Discussed options to ensure temperature remains below 41*f at all times. All cardboard boxes were removed at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
