Inspector's notes

Observed roast beef, unsliced ham and turkey, and sliced tomatoes with temperatures between 44 to 46*F in the walk-in at time of inspection. PIC provided temperature log which had most recent walk-in temps at 38*F about two hours prior to inspection. Observed ambient temperature of walk-in cooler at 45*F at time of inspection (see #33). PIC moved all TCS items to freezer to rapid cool at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Per the person in charge the brisket was placed in the unit around 8:30 am from the walk-in. Time of inspection was approximately 9:20 am. Person in charge put the brisket in the walk-in to rapid cool and voluntarily discarded the top three pre-made portioned briskets. ===Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
